The Taberna Del Alabardero is located in the heart of old Madrid, in the Austrias quarter, just beside the Royal Theater and in front of the Palacio de Oriente, the official residency of the Spanish Royal Family. The name of this restaurant originates from the infantry corps that formed the private guard of the king of Spain in the old days. The restaurant, opened in 1974, has been an exceptional witness of some of the most heated cultural and political arguments of Spain?s recent history. Roberto Hierro is the head chef at the Taberna and offers to the guests a cuisine rooted in Basque origins that blends with a personal an innovative signature. The menu changes regularly to adapt the offering to the freshest ingredients? of the season, it is possible to plates such as Beetroot biscuit with honey & nuts vinaigrette, Grilled goats cheese and vegetables, Red pepper puree or classics such as Loin of Hake in garlic & parsley sauce, or Squid in black ink sauce.
